Apparently some countries in Europe are using stainless steel to replace copper. Is this something that can be done in the US?

Some context: I'm working on a new project with two water systems, one is potable city water for all the faucets and the other one is lightly treated rain water for washers, toilets, and showers (technically should be safe to drink but I'm not going to risk it).

I plan to use PEX for the rain water system but would like to use copper or steel for the potable water. I've had issues with PEX giving a plastic taste to the water and would prefer to keep the taste out. Also, stainless steel apparently has press fittings that do not require welding.

Any recommendations and advice?
